If you are reading my site you probably want to learn a little bit about me...
My name is Philip Riggs. In 2004 I began suffering a serious depression that lasted for months. It nearly cost my marriage.
You can read the whole story on my Squidoo depression page.
Long story short, I had low blood sugar due to my diet. I began investigating nutritional methods of controlling my low blood sugar. Ultimately I found the good carb Paleo Diet, which turned all my health problems around.
After being on the diet for a year and feeling better than I remember feeling in my life, I learned about cooking good carbs foods for my family.
I began investigating cookbooks and found some great ideas for replacement ingredients. However, most books were focused either on low carb diets, or good carb diets that emphasized grains and beans.
I didn't like low carb diets that focused on meat and fat and minimized the great fruits and vegetables I love.
The good carbs diets cookbooks tended to allow food high in toxic lectins. However, I liked the philosophy. So I adapted the good carbs diet philosophy of low glycemic index with my research into toxic lectins and food acidity. That is what this website is about...
Adapting food to a good carbs lifestyle.
I can sum my philosophy into these points...
But I want my website to be more than just recipes. I want to give the reader the skills to adapt their own favorite recipes. So expect more than a list of recipes here...
Expect to gain good carb cooking skills and thinking to recreate your own recipes.
Your friend,
Philip Riggs, Ph.D.
P.S. Drop me a note about what you like and don't like about my site. I am always trying to improve it.
