Traditional methods of cooking reduce these anti-nutrients and maximize the availablity of good nutrients. These methods include slow rise times and fermentation for grains, long soak times and water changes for beans.
Be sure to mix these ingredients in with other good carbs naturally low in phytic acids and lectins. For example: fix a soup with lots of good carbs and some traditionally cooked beans or rice.
